    Recipes from the Road

     

    If you’ve ever traveled to Mexico, you’ll discover that they love to use Cilantro, especially in salsa. If you love the taste of Cilantro, here’s a simple, yet versatile recipe you can use.

    It’s simple and quick and can be used as a substitute for pesto. I mostly use it over steamed vegetables, though it can be used in a variety of ways.

    Here’s what you need:

        A small bunch of cilantro leaves

        1 tsp. of olive oil

        1 tsp. of peanut butter or tahini or almond butter (to your taste)

        1 tsp. of tahini (or soy sauce)

        1 clove of garlic (or more up to 3 – this will really punch it up.)

        A small amount of water

    Place all of these ingredients in a food processor and blend until you wind up with a paste. That’s all there is to it.

    Note: To punch things up a bit, I use 1 tablespoon instead of 1 teaspoon.
